Christmas Carrot Cake


1-1/2 cups (375 mL) vegetable oil
2 cups brown sugar
2 cups finely grated carrots
4 eggs
1 teaspoon  vanilla extract
2 cups mixed candied fruit
2 cups raisins
1 cup chopped walnuts
3 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg


  • Place oil in a large mixing bowl and gradually blend in sugar.
  • Mix in carrots, eggs, vanilla, candied fruit, raisins, and nuts.
  • Sift together flour, baking powder, baking soda, cinnamon, salt, cloves, and nutmeg.
  • Mix dry mixture and carrot mixture together well.
  • Pour cake mixture into a two well greased 6 x 10 inch (15 x 25 cm) loaf pans.
  • Bake at 350°F (180°C) for 1 hour or until a toothpick inserted in the centre comes out clean.

Makes 2 loaves.

NOTE: This cake is so delicious - and makes a great hostess gift too!
