Ingredients:
1 cup Velute
sauce
2 tsp. essence of mushrooms
1 oz. butter
Preparation:
Mix two dessert-spoonsful
of essence of mushrooms with a cupful of Velute
sauce, bring to boil and than reduce heat. Cook for about 10 minutes,
keep on stirring and just before serving add an ounce of butter.
TIP: This sauce can
be made with essence of truffle, or game, or shallot.
