Baked Shad


Ingredients:

1 whole shad
6 to 7 crackers
1/4 cup milk
1 tablespoon fresh parsley, chopped
1/2 teaspoon garlic, minced
Salt to taste
Poultry dressing to taste
1 teaspoon butter
1 tablespoon olive oil



Preparation:

  • Make a nice stuffing of six to seven crackers, according to size of family (bread crumbs will do). Roll fine, or soak until soft in milk (water will do). Season to taste with poultry dressing, chopped fresh parsley, garlic, salt and add a small piece of butter.
  • Wash the shad and stuff. Have a large sheet of parchment paper, sprayed with olive oil, or a piece of foil.
  • Put into a baking-pan and set in the preheated oven.
  • Bake for about 45 to 50 minutes.


NOTE:
Mackerel is fine baked in the same way.
