Tasty Shrimp with Rice

Ingredients:


2 lb large shrimp
2 tablespoons olive oil
3 large clove garlic, minced
1 cup clam juice, fish broth or chicken broth
3 tablespoons fresh lemon juice
1/4 teaspoon salt
1 teaspoon Vegeta
1/8 teaspoon crushed red pepper flakes
2 teaspoons cornstarch blended with 2 tablespoons water
1/3 cup chopped parsley


Directions:

  • Cook 2 cups dry rice according to package directions; set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add garlic and cook until tender, about 2 minutes.
  • Add shrimp and cook, stirring frequently, until just cooked through, about 3 minutes.
  • Add clam juice, lemon juice, Vegeta, salt, and red pepper flakes; bring to a boil. Cook until shrimp are opaque throughout, about 2 minutes.
  • Arrange rice on serving plates.
  • With slotted spoon, transfer shrimp to serving plates with rice.
  • Bring liquid in skillet to a boil, stir in cornstarch mixture and cook, stirring, until is lightly thickened, about 1 minute.
  • Stir chopped parsley into sauce; spoon sauce over shrimp.
  • Serve immediately.

Makes 6 servings.
