Crispy Tuna Steaks in Orange Sauce


Ingredients:

2 large oranges
1½ cups orange juice
2 tablespoons dry white wine
2 tablespoons cornstarch
2 tablespoons chopped fresh cilantro
2 tablespoons cornmeal
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 tuna steaks, 1/2 inch thick (6 oz)
2 tablespoons extra virgin olive oil


Directions:
  • Peel and section oranges. Whisk orange juice, wine, and cornstarch in small saucepan until smooth. Bring to a boil over medium-high heat and cook, stirring, until sauce boils and thickens, about 2 minutes. Remove from heat and stir in orange sections. Keep warm.
  • Mix cilantro, cornmeal, salt, and pepper in pie plate. Coat both sides of tuna steaks with cornmeal mixture, pressing firmly so mixture adheres.
  • Heat 1 tablespoon olive oil in large cast-iron skillet over medium-high heat until hot but not smoking. Add tuna and quickly cook until done to taste, 2 to 3 minutes on each side for medium-rare.
  • Add remaining oil just before turning fish. Serve with the sauce.

Makes 4 servings.
