Fast Coffee Cake


INGREDIENTS:
  • 2 cups flour
  • ½ teaspoon salt
  • 3 tablespoons sugar
  • 4 teaspoons Baking Powder
  • 2 tablespoons shortening
  • 1 cup milk

PREPARATION:

1. Mix and sift dry ingredients; add melted shortening and enough milk to make stiff batter.

2. Spread ½ inch thick in greased pan; add top mixture.

3. Bake for about 30 minutes in moderate oven.


TOP MIXTURE:

  • 2 tablespoons flour
  • 1 tablespoon cinnamon
  • 3 tablespoons sugar
  • 3 tablespoons shortening


PREPARATION:

1. Mix dry ingredients; rub in shortening and spread thickly over top of dough before baking.

In Africa and Yemen, it was used in religious ceremonies. As a result, the Ethiopian Church banned its secular consumption, a ban in effect until the reign of Emperor Menelik II of Ethiopia. It was banned in Ottoman Turkey during the 17th century for political reasons, and was associated with rebellious political activities in Europe.
