Cold cookie dough is much easier to handle. The very good plan is to prepare dough several hours before attempting to roll it. In fact, a cookie mixture may be made in the evening and allowed to stand until the next morning before being rolled out and baked.

BASIC COOKIES
Ingredients:
  • 1 cup of butter 
  • 2 cups of sugar 
  • 1 cup of sweet milk
  • 1/4 cup of grated nutmeg 
  • 5 cups of sifted flour
  • 2 teaspoons of baking powder
Preparation:
Sift baking powder with flour. Combine all other ingredients and mix into a soft dough than cut dough into two round cakes. Before ready to bake, roll the dough as thin as pie crust, cut round shapes or any other shapes you prefer. Bake in a quick oven until  light brown. 

TIP: These cookies can be made of sour milk (instead of sweet milk) and a teaspoon of soda dissolved in it (instead of two teaspoons of baking powder). Margarine, or some other shortening, sour or sweet cream or combination of cream and shortening can be used in place of butter.

NOTE: For people who are lactose intolerant, water cookies can be made the same as above, using water in place of milk. Water cookies keep much longer than milk cookies.

SUGAR COOKIES

Ingredients and Preparation:

  • 1 cup of butter
  • 1-1/2 cups of sugar
  • 1/2 cup of sour milk 
  • 1 level teaspoon of soda
  • 1 teaspoon of grated nutmeg 
  • Flour enough to roll quite soft dough
  • Put a tablespoon of fine sugar on a plate and dip the tops of each as you cut them out. 
  • Place on buttered tins and bake in a quick oven a light brown.

Quick Coconut Cookies
In a food processor or with mixer prepare dough from: 1-1/2cups sugar, 3/4 cup butter, 1/2 cup milk, two eggs, 1-1/2 teaspoons baking powder, 1/2teaspoon extract of vanilla, 1 cup grated coconut and flour enough to make soft dough to roll out cookies in any shape you like. Bake light brown in a quick oven, on non-stick cookie sheet or on buttered tins,
Quick Fruit Cookies
In a food processor or with mixer prepare dough from: 1-1/2 cup of sugar, 1 cup of butter, 1/2 cup of milk, 1 whole egg, 2 teaspoons of baking powder, 1 teaspoon of grated nutmeg, 3 tablespoons of English currants or chopped raisins. Add enough flour to mix soft dough and roll out, using just enough flour to stiffen sufficiently. Cut out with a large cutter, wet the tops with milk and sprinkle sugar over them. Bake in a quick oven on non-stick cookie sheet or on buttered tins.
Quick Lemon Cookies
In a food processor or with mixer prepare dough from: 
1 cup of butter, 2 cups of sugar, 3 eggs, the juice of one lemon and the grated peel from the outside. Beat thoroughly all moist ingredients, than add 4 cups of sifted flour (or enough for a stiff dough). After all is in, add half teaspoon of soda dissolved in a tablespoon of milk. Mix well and roll out as any other cookies. Bake a light brown. 
NOTE: Do not use any other wetting.
