SOFT COOKIES

Ingredients:
  • 1 cup of molasses
  • 6 tablespoons of shortening
  • 1 teaspoon of ginger
  • 1-1/2 teaspoons of cinnamon
  • 1/2 teaspoon of allspice
  • 1 egg
  • 1 cup of sour milk
  • 1  teaspoon of baking soda
  • 7 cups of flour (a bit more or less just to form soft dough)
Preparation:
  • Place in a saucepan one cup of molasses and six tablespoons of shortening.
  • Bring to a boil and then add one teaspoon of ginger, one and one-half teaspoons of cinnamon, and one-half teaspoon of allspice. 
  • Stir to blend and then take from fire and let cool.
  • After that add one egg, one cup of sour milk, and one teaspoon of baking soda. 
  • Beat the ingredients with mixer or in food processor to blend and then add sufficient flour to make a soft dough that can be handled, usually about seven cups. 
  • Form into little balls the size of a walnut and then flatten slightly between the hands. 
  • Bake on ungreased non-stick cookie sheet or on buttered and floured inverted baking pan in a moderate oven for about ten minutes.
