 LEMON JELLY FILLING


Ingredients:

2 lemons
2 cups sugar
2 eggs, separated
1 cup water
2 tablespoons sifted flour
1 tablespoon melted butter


Directions:

  • Grate the yellow rind of two lemons and squeeze out the juice; set aside.
  • Mix the sugar and yolks, then add the well beaten egg whites and then the rind and juice from lemons.
  • Pour on a cup of boiling water; stir into this two tablespoons of sifted flour, rubbed smooth in half a cup of water first; then add a tablespoon of melted butter; cook until it thickens.
  • When cold, spread between the layers of cake. 

TIP:
Oranges can be used in place of lemons.


NOTE:
Another filling of lemon (without cooking) could be made of the grated rind and juice of two lemons and the whites of two eggs beaten with one cup of sugar.
