Mulligatawny Soup


Ingredients:

2 tablespoons vegetable oil
1/2 cup chopped celery
1/2 cup finely chopped carrot
1/2 cup chopped onion
4 cups turkey stock
1 cup canned tomato sauce
2 teaspoons curry powder
1 teaspoon salt or to taste
1/4 teaspoon pepper
2 cups chopped or shredded cooked turkey
2 red apples, seeded and chopped
1 tablespoon chopped fresh parsley

Directions:
  • Sauté celery, carrot and onion in hot oil for 3 - 5 minutes.
  • Add turkey stock, tomato sauce, curry, salt, pepper, turkey, apple, and parsley; bring to boil. Simmer, covered, 10 to 15 minutes until hot and apple is crisp-tender.

TIP: You can use uncooked turkey instead of cooked turkey, just cook a few minutes before adding apple and then simmer 15 to 20 minutes longer.

Makes 5 - 6 servings.
