Thai Chicken Kabobs

Leftover chicken can be easy prepared into new dishes your family will love.

Ingredients:

12 oz leftover roasted chicken breasts
2 green bell peppers
12 cherry tomatoes
1/4 cup Thai peanut sauce
Skewers
1 cup rice

Directions:

  • Cook rice per package direction. Set aside.
  • Cut 12 oz roasted chicken breast into 1 inch cubes.
  • Cut green bell peppers into 1 inch pieces.
  • Thread chicken breast cubes on skewers with 2 green bell peppers and 12 cherry tomatoes,
  • Place in a lrate baking dish and brush with Thai peanut sauce.
  • Preheat broiler and broil 2 to 3 minutes per side or until heated through.
  • Serve kabobs over rice with additional sauce for dipping.

Makes 4 servings.
