Scalloped Macaroni with Peas in Tomato and Cheese Sauce

Ingredients:

1 cup macaroni
2 quarts of boiling water
1 cup peas
1 pint tomatoes, juice and pulp
1 cup grated Mozzarella cheese
1/4 cup butter
1/4 cup flour
1/8 teaspoon cayenne
1 teaspoon salt
2 tablespoons melted butter

Directions:

  • Melt butter, add flour, cayenne and 1 teaspoon of salt. Gradually add tomatoes and when at boiling point remove from fire, add cheese and peas.
  • Preheat oven to 350F (180C).
  • Grease baking dish with melted butter.
  • Place macaroni in greased baking dish, pour sauce over it and bake in preheated oven for about 25 to 30 minutes.
  • Serve hot with your favorite salad.

Makes 3 to 4 servings.
