Cheese Salsa Salad Wraps


Ingredients:

2/3 cup cottage cheese
1/3 cup medium salsa
1/4 cup slivered green pepper
1 tablespoon chopped fresh cilantro or fresh parsley
4 lettuce leafs
4 soft flour tortillas (7-inch)


Directions:

  • Stir together cottage cheese, salsa, green pepper and cilantro; set aside.
  • Place lettuce leaf onto centre of each tortilla, and spoon cottage cheese-salsa mixture onto lettuce.
  • Fold up bottom edge of each tortilla, and then fold over sides.
  • Serve immediately.

Makes 4 servings.
