Maya's Tartar Sauce


Ingredients:

2/3 cup olive oil mayonnaise
1 tablespoon mustard
1 tablespoon lemon juice or vhite vinegar
2 tablespoons extra virgin olive oil
1 tablespoon fresh onion juice
1/4 teaspoon ground pepper
1/4 teaspoon salt
2 tablespoons chopped capers
2 tablespoons chopped cucumber pickle


Directions:

  • In medium bowl mix mayonnaise, mustard, vinegar, olive oil and onion juice.
  • Stir in salt and pepper.
  • Add chopped capers and cucumber pickle.
  • Taste and adjust seasoning if needed.
  • Chill covered in refrigerator for at least 1 hour before use.


NOTE:
This sauce is good for fried or boiled fish, boiled vegetables, fish salad, may be used with breaded, fried or broiled meats and vegetables.
