Date Sandwiches

Ingredients:

3/4 cup dates
1/4 cup chopped walnuts
1/2 lemon
Slices of fresh white, graham, or whole-wheat bread

Directions:
  • Wash the dates and remove the seeds. Steam them over hot water or in a double boiler until they are soft, and then mash them thoroughly.
  • Squeeze the juice from the lemon, grate the yellow part of the rind and mix with the juice, and add both to the steamed dates.
  • Stir in the walnuts chopped very fine and mix well.
  • To make the sandwiches, cut thin slices of fresh white, graham, or whole-wheat bread and spread one slice with butter and the corresponding slice with the date filling. Place the two together, trim the crusts if desired, and serve.

Did You Know?
Dates have a high tannin content and are used medicinally as a detersive (having cleansing power) and astringent in intestinal troubles. As an infusion, decoction, syrup, or paste, dates may be administered for sore throat, colds, bronchial catarrh, and taken to relieve fever and a number of other complaints. One traditional belief is that it can counteract alcohol intoxication. The seed powder is also used in some traditional medicines. Because of their laxative quality, dates are considered to be good at preventing constipation.
