Strawberry Pie

Season for strawberries is usually short, and because of that it is usually desired to use them in as many ways as possible. Strawberry pie is offered as one of the more unusual ways. Made into individual pies or tarts and served with whipped cream, this furnishes a very attractive dessert.

Ingredients:

1 single unbaked crust (you can use Easy Pie Pastry recipe)
1 quart strawberries
1-1/2 c. sugar
3 Tb. flour


Preparation:
  • Prepare Easy Pie Pastry according to directions given in the recipe.
  • Spread the strawberries on a single unbaked crust of a pie. 
  • Mix the sugar and flour and sprinkle over the berries. 
  • Put half-inch strips of paste across the top in the form of a lattice. 
  • Place in the oven and bake until the crust is golden brown, the strawberries are well cooked, and the juice is thick.

NOTE: The Easy Pie Pastry is ideal recipe for single-crust pies. The amounts given in the recipe will make one double-crust pie or two single-crust pies of medium size. You can use half of the recipe for this pie or use whole recipe to prepare an extra crust and freeze it.
