The Beauty of Italian Cookery

FRIED BREAD WITH RAISINS

Ingredients:

3 to 4 slices of stale bread
2
tablespoons of golden raisins
1 large slice of raw ham, chopped into small pieces
1
leaf of sage, chopped
1
tablespoon granulated sugar
2 tablespoons of good quality vinegar

Preparation:

  • Take some rather stale bread, cut it into slices, removing the crust.
  • Fry the bread in oil, butter or lard, and then arrange it on a platter;
  • Meanwhile prepare the raisins as follows: Take a small saucepan and put into it two tablespoons of golden raisins, a large slice of raw ham chopped into small pieces, and a leaf of sage, also chopped up, one tablespoon of granulated sugar, and two tablespoons of good quality vinegar.
  • Heat these ingredients in the saucepan over medium heat, and as soon as you have a syrup (stir constantly) pour the raisins onto the pieces of fried bread, and the sauce over and around them.
  • These are very nice when served with any cold meat.
