TOMATO BRUSCHETTA


Ingredients:

6 cloves garlic (mashed and skin removed)

12 slices Italian Bread (or some other thick crusted bread) sliced 1/2 inch thick
Extra virgin olive oil
Salt and freshly ground pepper to taste
3 cups of fresh ripe plum tomatoes (seeds removed) 
12 fresh basil leaves cut into small pieces

NOTE: Instead of fresh basil leaves, you could use dried basil leaves or oregano.

Preparation:

  • Preheat a grill or charcoal 
  • Mash the garlic cloves (just enough to split and loosen the skin)
  • Grill the sliced bread to a golden brown on both sides.
  • Take the bread off the grill and while it is still hot, rub one side of each slice with the garlic.
  • Put the bread on a platter, garlicky side up, and pour a thin stream of olive oil over each slice, enough to soak it lightly.
  • Sprinkle with salt and a few grindings of pepper. 
  • Top bread with prepared diced tomatoes and sprinkle with basil.
  • Serve while still warm.

Makes 6 to 12 servings.
