 TOMATO BRUSCHETTA

Ingredients:
6 cloves garlic (mashed and skin removed)
12 slices good Italian Bread (or some other thick crusted bread) sliced half inch thick
extra virgin olive oil
salt and freshly ground pepper to taste
3 cups of fresh ripe plum tomatoes (seeds removed)
12 fresh basil leaves cut into small pieces

NOTE: Instead of fresh basil leaves, you could use dried basil leaves or oregano.

Preparation:

Preheat a grill or charcoal
Mash the garlic cloves (just enough to split and loosen the skin)
Grill the sliced bread to a golden brown on both sides.
Take the bread off the grill and while it is still hot, rub one side of each slice with the garlic.
Put the bread on a platter, garlicky side up, and pour a thin stream of olive oil over each slice, enough to soak it lightly.
Sprinkle with salt and a few grindings of pepper.
Top bread with prepared diced tomatoes and sprinkle with basil.
Serve while still warm.
Makes 6 to 12 servings.
