Fish Pomodoro


INGREDIENTS:

2 lb. white fish fillets of your choice
3 large ripe tomatoes
4 Tbsp. extra virgin olive oil
2 Tbsp. fresh lemon juice
1/8 tsp. ground black pepper
Salt to taste
2 Tblsp. Italian seasoned dry bread crumbs
2 Tbsp grated Parmesan cheese
 

PREPARATION:


Preheat oven to 350 degrees F.
Core tomatoes and cut into 1 inch slices.
Spread 2 tsp. of olive oil over the bottom of a a baking dish.
Place prepared tomato slices in a single layer in dish, overlaping slightly.
Place fish fillets on tomatoes and sprinkle with lemon juice, salt and ground black pepper.
In a small bowl combine bread crumbs, Parmesan cheese and 2 Tbsp. of olive oil and sprinkle on fish.
Bake uncovered 20 to 25 minutes or until fish flakes easily with a fork.

Serve with your favorite salad.

Makes 4 servings.
