Pesci Diversi alla Casalinga

Ingredients:

1 lb. sole fillet (or any other white sort of fish)
1 stick celery
Spring of parsley
1 large carrot
1 clove garlic,
minced
1 small onion
2 salted anchovies
1 teaspoon ground almonds
3 capers
2 mushrooms
1 oz. butter
Salt and pepper to taste
1 tablespoon flour
2 to 3 tablespoons tomato sauce (optional)


Preparation:

  • Chop up a stick of celery, a sprig of parsley, a carrot, and onion. Pound up anchovy in brine (well cleaned, boned, and scaled), minced garlic, almonds, three capers and two mushrooms.
  • Put all this into a saucepan with one ounce of butter, salt and pepper, and fry for a few minutes, then add a few spoonsful of hot water and a tablespoon of flour and boil gently for ten minutes, put in the fish and cook it until it is done.
  • Serve with rice and boiled vegetables or your favorite salad.

NOTE:
If you like, you may add a little tomato sauce.
