Almond Brittle

Almond brittle will make a great foodie gift and tasty snack for people who love the crunchy snap of a shard of brittle. Just wrap in some nice box or use cellophane and pretty ribbon.

Ingredients:

1/2 cup honey

1/2 cup organic coconut sugar

1/4 cup water

2 tablespoons coconut butter or unsalted butter

2 cups toasted almonds, coarsely chopped

1 teaspoon aluminum free baking soda


Directions:

1. In a heavy saucepan, bring honey, water and coconut sugar to a boil. Stir often to ensure coconut sugar is dissolved.

2. Line cookie sheet with parchment paper and set aside.

3. Add coconut butter to sugar mixture and stir constantly until candy thermometer reaches 280º F (140º C), for about 10 minutes.

4. Add almonds to the sugar mixture and stir for another minute or two (until whiskers form when you drop mixture from the spoon).

5. Remove mixture from heat and stir in baking soda. Mixture will rise. Work quickly and turn this mixture out onto parchment paper lined cookie sheet. Form into a rectangle shape and cool for about 45 minutes.

6. Break candy into pieces and store in sealed container in cold place or refrigerator.

Tip:

If you dont have candy thermometer, drop a little of the mixture into a glass of cold water and if it forms a hard little ball, it is ready.
