Beaten Biscuit

(An old-fashioned Southern Recipe)

Ingredients:


8 cups of sifted flour
1 teaspoon of salt
1 tablespoon of lard
1 egg
1 cup milk

Preparation:
  • Make a dough with 1 cup of milk, or if you don't have milk, plain water will do.
  • Beat well until the dough blisters and cracks; pull off a two-inch square of the dough; roll it into a ball with the hand; flatten, stick with a fork, and bake in a quick oven.

NOTE:
It is not beating hard that makes the biscuit nice, but the regularity of the motion. Beating hard, the old cooks say, kills the dough.
