Sour Milk Biscuits

Ingredients:

4 cups flour
2 ounces butter
1 teaspoon salt
1 teaspoon baking soda
2 cups sour milk


Preparation:
  • Rub butter into the flour.
  • Dissolve baking soda in sour milk and add it to the flour mixture.
  • Make a dough and knead it up quickly.
  • Roll it out nearly half an inch thick and cut out with a biscuit-cutter.
  • Bake immediately in a quick oven.


NOTE:
Very nice biscuit may be made with sour cream and without the butter by the same process.

If you don't have butter, you can use extra virgin olive oil or any other vegetable oil instead.

TIP: If you don't have sour milk, add 2 teaspoons of lemon juice or plain vinegar to the regular milk and let it stand for about 15 minutes before use.
