Budino di Riso (Rice Pudding)
4 cups milk
1 1/2 cups rice
3/4 golden raisins
1 tsp. orange peel
2 whole eggs
3 egg yolks
1/4 cup unsalted butter, softened
1/2 tsp. vanilla extract 
4 Tbsp. rum

Grease smooth sided pudding mold with butter and dust with breadcrumbs. Set aside.

In a large heavy saucepan bring 3 cups of the milk to a simmer. Add rice and cook until rice is half done. 

Remove from the heat and stir in sugar, raisins, orange peel, and the butter. Continue to cook, stirring and adding remaining 1 cup of milk as the rice absorbs it. Cook until the rice is soft.

Preheat oven to 350 degrees F (180 degrees C).

Remove the mixture from the heat, let it cool for 3 minutes.Stir in the eggs, rum, and vanilla extract. Mix well and pour the mixture into a greased pudding mold and bake it until set (for about 30-35 minutes). Serve hot.
