English Muffin Apple Brunch

This tasty and easy to make recipe is flavorful alternative to traditional breakfast or brunch recipes and we are sure it will become family favorite.

Ingredients:

4 plain English muffins, split in half

8 tablespoons apricot preserves

2 medium cooking apples, peeled, cored and thinly sliced

4 tablespoons fresh orange juice or frozen orange juice concentrate

2 tablespoons granulated sugar

1/2 teaspoon cinnamon

2 tablespoons melted butter, for brushing baking sheet (or use cooking spray)


Makes 8 servings.


Directions:

1. Heat oven to 350º F (180º C).

2. Combine sugar and cinnamon in a small bowl; set aside.

3. Spread preserves evenly on muffin halves.

4. Peel, core and thinly slice apples. Top muffin halves with apple slices.

5. Brush apple slices with orange juice and sprinkle with cinnamon-sugar mix.

6. Arrange muffin halves on buttered baking sheet and bake in preheated oven for 12 to 15 minutes or until apples are tender.

7. Serve warm.

MOM 2 MOM HELP

Form a small "mom's club" with other mothers in your area to help each other out. Offer car pooling, game time, sleepover solutions, cooking lessons, craft time or some other activity you can do with your and other's children. Then they can repay the favor.

Gather up the moms and pick a night or day where you all cook together at one house. You can prepare freezer friendly meals, theme meals, bake, exchange recipes, etc.
