English Muffin Apple Brunch

Ingredients:

2 plain English muffins, split in half
4 tablespoons apricot preserves
1 medium cooking apple, peeled, cored and thinly sliced
2 tablespoons fresh orange juice or frozen orange juice concentrate
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
1 tablespoon melted butter, for brushing baking sheet (or use cooking spray)

Directions:

  • Heat oven to 350 F (180 C).
  • Combine sugar and cinnamon in a small bowl; set aside.
  • Spread preserves evenly on muffin halves.
  • Peel, core and thinly slice apple. Top muffin halves with apple slices.
  • Brush apple slices with orange juice and sprinkle with cinnamon-sugar mix.
  • Arrange muffin halves on buttered baking sheet and bake in preheated oven for 12 to 15 minutes or until apples are tender.

Makes 4 servings.
