Herbs & Cheese Shortbreads

Teach your kids to create savory treats that are nutritious and fun to make. These tasty ans crispy treats paired with some fresh made soup can be great start of any meal. Perfect for lunch or dinner.

Ingredients:

1/2 cup butter, softened at room temperature

2 tablespoons sour cream

1/3 cup grated Parmesan cheese

1/2 cup grated cheddar cheese

1/2 cup grated Mozzarella cheese

1/4 teaspoon cayenne pepper

2 tablespoons hemp seeds

1/2 teaspoon dry mustard powder

1¼ cups all puropse flour

1 teaspoon Italian seasoning, optional

2 tablespoons sesame seeds

2 to 3 tablespoons milk

Some extra butter for greasing cookie sheet.


Directions:

1. In a large mixing bowl, beat the butter and sour cream until light and fluffy. Stir in the cheeses and all other ingredients except milk and mix well. If the dough is too crumbly, add milk, tablespoon by tablespoon, until the dough holds together.

2. pat the dough into a disc and refrigerate for about 1 hour.

3. Preheat oven to 300º F (150º C).

4. Roll the dough out into a large 1/4-inch thick circle. Use a scalloped cookie cutter to cut out the shortbreads.

5. Place shortbreads on a greased cookie sheet and bake 30 to 35 minutes or until golden brown.


Makes about 32 to 36 shortbreads.

Helpful Tips:

When a recipe calls for softened butter, the butter should be soft enough to blend smoothly with other ingredients.

For room temperature softening, allow butter to stand at room temperature for 1 to 2 hours or until soft to the touch. To speed up this process, cut the butter into pieces first.
