Tuna Nuggets

1 can (6 or 7 oz.) flaked tuna, drained
1 medium carrot, finely grated
2 tablespoons finely chopped onion
1 large egg, slightly beaten
2 tablespoons olive oil mayonnaise
1 cups breadcrumbs
1/4 teaspoon onion salt 
1/4 teaspoon Vegeta
Ground black pepper to taste
Oil for frying


  • In a food processor or medium bowl, thoroughly mix all ingredients, except oil. Make sure all ingredients stick together well.
  • Line platter with waxed paper; set aside
  • With damp hands, form the mixture into bite-sized nuggets and place them on a lined platter as they are done.
  • In a heavy skillet, heat about 2 tablespoons oil over medium heat. Add the Tuna Nuggets and cook in batches (if necessary), turning once, until golden brown on both sides (about 3 to 4 minutes total).

  • Remove to a paper towel-lined plate as they are done.
  • Serve hot or at room temperature with your favorite dipping sauce and raw vegetables or salad .

Makes 3 to 4 servings.
