Tuna Nuggets

Most children think cooking is fun, and with a little cooking instruction from our Cooking with Kids guide, and recipes provided, your kids will learn to cook delicious and much healthier food. It is easy to involve children into your dinner preparation if you start making small and easy changes in your cooking routine.

Ingredients:

1 can (6 or 7 oz.) flaked tuna, drained

1 medium carrot, finely grated

2 tablespoons finely chopped onion

1 large egg, slightly beaten

2 tablespoons olive oil mayonnaise

1½ cups breadcrumbs

1/4 teaspoon onion salt

1/4 teaspoon Vegeta

Ground black pepper to taste

Oil for frying

Directions:

1. In a food processor or medium bowl, thoroughly mix all ingredients, except oil. Make sure all ingredients stick together well.

2. Line platter with waxed paper; set aside

3. With damp hands, form the mixture into bite-sized nuggets and place them on a lined platter as they are done.

4. In a heavy skillet, heat about 2 tablespoons oil over medium heat. Add the Tuna Nuggets and cook in batches (if necessary), turning once, until golden brown on both sides (about 3 to 4 minutes total).

5. Remove to a paper towel-lined plate as they are done.

6. Serve hot or at room temperature with your favorite dipping sauce and raw vegetables or mixed greens salad.


Makes 3 to 4 servings.
