Orange Bread Pudding

Orange Bread Pudding


8 cups bread cubes (from day old egg or French bread)
5 eggs
1 can sweetened condensed milk
3 cups milk
1/3 cup orange liqueur or juice concentrate
2 tablespoons grated orange rind
2 tablespoons butter, melted
Cream or custard sauce

  • Place bread cubes in greased 13x9-inch (33x23 cm) baking pan.
  • In large bowl whisk together eggs, condensed milk, milk, orange liqueur and rind, and butter.
  • Pour egg mixture over bread cubes; make sure all cubes are moistened. Let stand 10 minutes.
  • Bake in 325° F (160° C) oven for 35 to 40 minutes or until pudding begins to puff up.

Makes 6 to 8 servings.

NOTE: Reduce oven temperature by 25° F (10° C) for glass pan.

As a safe rule boil the pudding twice as long as you would bake it.

When pastry or baked puddings are not done through, and yet the outside is sufficiently brown, cover them over with a piece of white paper until thoroughly cooked; this prevents them from getting burnt.
